Bhel puri is tossed, sev puri is stacked, and pani puri is filled and dunked. That is the short answer. All three are chaat, all three use sev and the same two chutneys, and all three get mixed up on menus because the names sound alike. What separates them is the base: puffed rice for bhel puri, flat papdi for sev puri, and hollow shells for pani puri.

This guide compares the three side by side, gives a quick recipe for each, and shows how to build a chaat snacks UK spread at home from one shopping list.

 What Is Chaat?

Chaat is the family name for Indian street food snacks that pile sour, sweet, spicy and salty into the same bite. The word comes from the Hindi chaatna, meaning "to lick". It covers dozens of dishes, and bhel puri, sev puri and pani puri are the three most people meet first.

They are among the most popular Indian snacks because they share a short list of building blocks: something crisp, boiled potato, onion, a sweet tamarind chutney, a green coriander-mint chutney, and sev. Change the crisp base and the method, and you get a different dish.

 Bhel Puri: The Tossed One

Bhel puri is the Mumbai beach snack, sold in paper cones along Chowpatty and Juhu. Puffed rice is tossed with potato, onion, tomato, both chutneys and sev, then eaten straight away.

Because nothing is assembled piece by piece, it is the easiest of the three to make and the hardest to get wrong.

Quick bhel puri (serves 4):

100g puffed rice

2 medium boiled potatoes, diced

1 small red onion and 1 tomato, finely chopped

3 tbsp tamarind chutney

2 tbsp green chutney

50g sev, plus extra on top

Chopped coriander and a squeeze of lemon

Put everything except the sev in a large bowl, toss for 20 seconds, add the sev, toss once more and serve. Eat it within 15 minutes, before the puffed rice goes soft. If you want to skip weighing out the dry ingredients, a ready bhel puri mix gives you the crunchy base in one bag.

 Sev Puri: The Stacked One

Sev puri swaps the bowl for a plate. Each flat papdi gets a little potato, onion and tomato, a few drops of each chutney, and then enough sev to hide everything underneath. The name is literal: puri covered in sev.

The whole dish depends on the base. Use a thin, crisp flat chaat papdi, because anything thick or slightly stale turns chewy the moment chutney touches it.

Quick sev puri (serves 4):

24 flat papdi

2 medium boiled potatoes, roughly mashed

1 small red onion and 1 tomato, finely chopped

Tamarind chutney and green chutney

60g fine sev

Chaat masala and chopped coriander

Lay the papdi out on a plate. Top each with potato, onion and tomato, add the chutneys, then cover with sev and a pinch of chaat masala. Serve immediately. Fine nylon sev is the classic choice because it sits lightly and does not overpower the papdi.

 Pani Puri: The One-Bite One

Pani puri uses a small hollow shell, called golgappa in the north and phuchka in Bengal. You crack the top, add spiced potato and chickpeas, fill it with chilled mint and tamarind water, and eat it whole.

It takes longest because the pani needs blending and chilling, but there is no frying if you start with ready-made pani puri shells. Blend mint, coriander and green chilli, stir into cold water with tamarind, black salt, roasted cumin and chaat masala, strain, and chill for two hours. Fill and dunk each shell only when someone is ready to eat it.

What About Dahi Puri and Papdi Chaat?

Two more names turn up next to these three, and both are yoghurt-based.

Dahi puri uses the same hollow shells as pani puri. Instead of spiced water, each shell is filled with potato, sweetened yoghurt, both chutneys and sev.

Papdi chaat uses the same flat papdi as sev puri, broken or whole, topped with potato, chickpeas, yoghurt, chutneys and sev. It is eaten with a spoon.

So if a search for papdi chaat near me or dahi puri near me turns up nothing close, the ingredients you already have for sev puri and pani puri will make both. Add a tub of yoghurt and you are there. A papdi chaat kit is the simplest way to get the papdi side sorted in one order.

One Shopping List for All Three

Most of the list is shared, which is why making all three is not much harder than making one.

Shared across every dish:

Boiled potatoes

Red onion, tomato, fresh coriander

Tamarind chutney and green chutney

Sev

Chaat masala

The one thing that changes:

Bhel puri: puffed rice

Sev puri and papdi chaat: flat papdi

Pani puri and dahi puri: hollow puri shells, plus mint, black salt and tamarind for the pani

For a party, the Ultimate Chaat Party Combo saves ordering each crisp base separately. Papdi also works as a papdi snack on its own, so nothing goes to waste if you over-order.

Which One Should You Make First?

New to chaat: start with bhel puri. No assembly, and it is ready in five minutes.

Having people over: sev puri. It looks impressive on a platter and can be built in batches of ten.

Want the full street food experience: pani puri. Set out the shells, filling and pani and let everyone make their own.

If you are feeding six or more, make all three. Boil the potatoes and make the chutneys once, then set out the three bases with a few Indian savoury snacks on the side.

Tips That Apply to All Three

Assemble at the last minute. Chutney and pani soften everything within minutes.

Season the potato. A pinch of salt, chaat masala and roasted cumin in the potato lifts all three dishes.

Balance the chutneys. Tamarind gives sweetness and tang, green chutney gives heat. Use roughly three parts tamarind to two parts green and adjust from there.

Keep the crisp things sealed. Puffed rice, papdi, sev and shells all go stale quickly once open. Store them in airtight tubs at room temperature.

Revive soft puffed rice. Dry-toast it in a pan for two minutes and let it cool before using.

 Frequently Asked Questions

What is the difference between bhel puri and sev puri?

Bhel puri is puffed rice tossed with vegetables, chutneys and sev in a bowl. Sev puri is built on individual flat papdi, each topped with potato, onion, chutneys and a layer of sev. One is mixed and eaten with a spoon, the other is assembled and eaten by hand.

Is pani puri the same as golgappa?

Yes. Golgappa, phuchka and pani puri are regional names for the same snack of hollow shells filled with potato and spiced water.

Is sev puri the same as papdi chaat?

No. Both use flat papdi, but sev puri is a dry topping of potato, chutneys and sev eaten by hand, while papdi chaat adds yoghurt and chickpeas and is eaten with a spoon.

Which is healthier, bhel puri or sev puri?

Bhel puri is generally the lighter choice, because puffed rice is not fried and the dish carries more raw vegetables. Sev puri sits on fried papdi with more sev. Portion size and the amount of sweet chutney matter more than the dish itself.

Are bhel puri, sev puri and pani puri vegetarian?

The traditional versions of all three are vegetarian. They are usually vegan too, as long as no yoghurt is added. Check individual product labels for allergens.

Can I use the same chutneys for all three?

Yes. Tamarind chutney and green coriander-mint chutney work across bhel puri, sev puri, pani puri, dahi puri and papdi chaat.

Where can I buy chaat ingredients in the UK?

Indian grocers carry most of them, and Chandra Foods sells sev, papdi, bhel puri mix and pani puri shells online with UK delivery, as well as from its store in Park Royal, London.

How long does bhel puri stay crisp?

About 15 minutes after mixing. Keep the puffed rice, sev and wet ingredients separate until you are ready to serve.

How to Make Pani Puri at Home in the UK: Recipe, Ingredients and Where to Buy Them

Pani puri is the one snack nobody eats politely. A crisp shell, a spoon of spiced potato, a dunk in ice-cold mint water, and the whole thing goes in at once. You do not need a street stall in Mumbai for that. With a pack of ready-made shells and about 30 minutes of prep, you can make pani puri at home in the UK that tastes the way it should.

This guide gives you a full pani puri recipe with measurements, a shopping list split by where you will find each item, and fixes for the things that usually go wrong.

 Pani Puri at a Glance

Serves: 4 people (around 40 puris)

Prep time: 30 minutes, plus 2 hours chilling for the pani

Cooking: boiling potatoes only, no frying if you buy the shells

Also called: golgappa (Delhi and the north), phuchka (Bengal), gupchup (Odisha and parts of central India)

 What Is Pani Puri?

Pani puri is one of the best-loved Indian snacks, a chaat made of four parts that only meet at the last second: a hollow fried shell (the puri), a spiced potato and chickpea filling, a sweet chutney, and the pani, a chilled herb water that is sour, salty and hot all at once. The name is literal. Pani means water, puri is the shell.

The golgappa you get in Delhi tends to have a sharper, spicier water and a plainer potato filling. Bengali phuchka uses a tangier tamarind water and mashed potato with black chickpeas. The Gujarati and Mumbai version, which is the one this recipe follows, adds sprouted moong or white chickpeas and often a sweet date-tamarind chutney. In Gujarati homes it usually shares the table with other Gujarati snacks such as fafda, gathiya and chakri.

Pani Puri Ingredients: Your UK Shopping List

The method is easy. The shopping is what trips people up, because no single supermarket shelf has everything. Here is how it splits.

 From an Indian snack specialist

Pani puri shells (golgappa puri). Making these from scratch means rolling semolina dough paper thin and frying it so each piece puffs into a hollow ball. Even experienced cooks lose a few flat ones per batch. Ready-made shells are what most households use, and Chandra Foods pani puri shells arrive already fried and crisp, so there is no hot oil involved.

Sev. Fine nylon sev is the classic topping. Thikhi sev or ratlami sev works if you want more heat.

Boondi. A handful floated in the pani is how many stalls serve it.

From the world foods aisle or a local Indian grocer

Black salt (kala namak)

Chaat masala

Tamarind concentrate or block tamarind

Jaggery, or dark brown sugar as a stand-in

Cumin seeds

 From any supermarket

Fresh mint and coriander

Green chillies, ginger, a lemon

Potatoes, a tin of chickpeas, a red onion

Black salt is the one item not to skip. Its slightly sulphurous tang is what makes pani taste like pani, and table salt cannot copy it.

Pani Puri Water Recipe (Teekha Pani)

Make this first. It needs time in the fridge.

You will need:

30g fresh mint leaves (a large handful, stalks removed)

30g fresh coriander, stalks included

2 to 3 green chillies

1 cm piece of ginger

2 tbsp tamarind concentrate

1½ tsp roasted cumin powder

1 tsp black salt

1 tsp chaat masala

Juice of half a lemon

1 litre cold water

Method:

Blend the mint, coriander, chillies and ginger with 100ml of the water until completely smooth.

Strain the paste through a sieve into a large jug, pressing with a spoon to get all the liquid out.

Stir in the tamarind, cumin, black salt, chaat masala, lemon juice and the rest of the water.

Taste it. It should be slightly too strong on its own, because the shell and potato will mellow it.

Chill for at least 2 hours. Add ice and a handful of boondi just before serving.

 Sweet pani (meetha pani)

Stir 3 tbsp tamarind concentrate and 3 tbsp grated jaggery into 500ml warm water until dissolved. Add a pinch each of roasted cumin and black salt, then chill. Put this out next to the green pani so children and anyone who avoids heat can still join in.

 Pani Puri Filling

3 medium potatoes (about 400g), boiled and peeled

1 x 400g tin of chickpeas, drained, or 150g sprouted moong

1 small red onion, finely chopped (optional)

½ tsp chaat masala

½ tsp roasted cumin powder

A pinch of chilli powder and salt

2 tbsp chopped coriander

Break the potato up with a fork so it stays chunky, then fold in everything else. Keep it at room temperature. Cold filling tastes dull.

How to Assemble and Eat Pani Puri

Tap the top of a shell with your thumb or the back of a teaspoon to make a hole about the size of a 10p coin.

Add a teaspoon of filling. The shell should be about half full.

Add a few drops of sweet chutney or meetha pani if you like.

Dunk the shell into the green pani, or spoon the pani in until it is nearly full.

Eat it in one bite, straight away. A filled puri goes soft in under a minute.

 Hosting a Pani Puri Night

Pani puri works best as a help-yourself station. Put the shells, filling, sev and two jugs of pani in a row and let people build their own. Plan on 8 to 10 puris per adult if it is a starter, and 12 to 15 if it is the main event.

For a family table, the Family Pani Puri Combo saves working out quantities yourself.

Once the pani and potato are made, turning one dish into a chaat spread takes very little extra work, because the same base ingredients carry across:

Sev puri: flat chaat papdi topped with potato, onion, chutney and plenty of sev

Papdi chaat: papdi, potato, chickpeas, yoghurt and both chutneys

Dahi puri: the same pani puri shells filled with potato and yoghurt instead of pani

Bhel puri: puffed rice mix tossed with onion, chutney and sev

Not everything has to be assembled. A bowl of masala papdi is an easy papdi snack to leave out for anyone who wants crunch without the build, and a few Indian savoury snacks on the side keep people going between rounds.

If you are feeding a bigger crowd, the Ultimate Chaat Party Combo covers the crunchy parts in one order. Finish with masala chai. It settles the heat better than anything cold.

How to Store Pani Puri Leftovers

Pani: up to 3 days in a sealed bottle in the fridge. Stir before using, as the spices sink.

Filling: up to 2 days in the fridge. Bring back to room temperature before serving.

Shells: in an airtight tub at room temperature, away from steam and damp. Never refrigerate them.

Assembled puris: do not keep. Only fill what will be eaten.

 Pani Puri FAQs

Where can I buy pani puri shells in the UK?

Indian grocers stock them, and you can order them online from Chandra Foods, which has been making Indian snacks in the UK since 1985. Larger supermarkets sometimes carry kits in the world foods aisle, though the range is limited.

Is there a pani puri point or papdi chaat near me?

If you live near Wembley, Southall, Tooting or Leicester's Belgrave Road, you will find chaat houses serving pani puri, dahi puri and papdi chaat. Everywhere else, a search for a pani puri point, papdi chaat near me or dahi puri near me often comes back empty. That is the best reason to keep shells and papdi in the cupboard: you can buy pani puri shells online, and the rest is a 30-minute job at home.

Is golgappa the same as pani puri?

Yes. Golgappa, phuchka, gupchup and pani puri are regional names for the same snack. The shell is the same, and the water and filling change slightly from region to region.

How many pani puri per person?

Allow 8 to 10 per adult as a starter and 12 to 15 as a main. Children usually manage 5 or 6.

Can I make pani puri without tamarind?

You can use extra lemon juice with a pinch of sugar. It will be sharper and less rounded, since tamarind has a fruity sweetness lemon does not have.

What can I use instead of black salt?

Sea salt with a squeeze of lemon is the closest substitute, but the flavour will be noticeably different. If you plan to make pani puri more than once, a small bag of kala namak is worth buying and lasts for months.

Can I make the pani a day ahead?

Yes, and it is better that way. The flavours settle overnight. Add the ice and boondi only when you serve.

How do I keep pani puri shells crisp?

Keep them sealed until the moment you serve, and reseal any opened pack in an airtight container. If they soften, a few minutes in a low oven brings the crunch back.

The Ultimate Guide to Sourcing Authentic Indian Snacks & Wholesale Ingredients in the UK

Finding authentic, high-quality Indian savouries, street food essentials, and bulk ingredients outside of India can often feel like a compromise. For homes and commercial kitchens across Great Britain, matching the distinct taste, freshness, and crispness of traditional delicacies requires carefully sourced ingredients.

Whether you are preparing a weekend feast for family or running a high-volume catering business, choosing the right food partner makes all the difference.

The Rise of Authentic Street Food at Home

Indian street food has carved out a permanent place in the UK culinary landscape. From vibrant weekend markets to home dinner parties, iconic snacks are more popular than ever.

Master the Perfect Pani Puri Experience

Few treats compare to the burst of flavour provided by a crisp, hollow puri filled with spiced potatoes, sprouts, and chilled herb-infused water. Creating authentic pani puri in the UK has become more convenient with ready-made options that help bring this much-loved street food experience to your table.

Look for puris with a crisp texture that can hold their shape when filled. Paired with tangy tamarind chutney, spicy mint water, and your favourite fillings, they make a popular choice for family gatherings and homemade chaat.

 Convenient Access to Regional Delicacies

Beyond famous street foods, maintaining a stock of daily savouries adds warmth to afternoon tea and social gatherings. From spiced gathiya and crunchy chevdo to classic mathri, regional snacks vary widely in texture and spice profiles.

Ordering traditional snacks online in the UK gives households access to a variety of familiar savouries beyond the limited selections available at some local shops. Check product descriptions and storage instructions to help keep your favourite snacks fresh and crisp.

Essential Ingredients for Commercial Kitchens & Caterers

For sweet shops, restaurants, and event caterers, sourcing quality bulk ingredients demands careful attention to freshness, supply consistency, and pricing.

Securing Bulk Tree Nuts and Culinary Essentials

High-volume food preparation relies on tree nuts for rich sauces, garnishes, baking, and traditional Indian sweets like barfi and halwa. Partnering with a dedicated supplier for wholesale nuts in the UK helps commercial buyers explore options for ingredients such as cashews, almonds, pistachios, and peanuts.

Buying in suitable quantities can help businesses manage ingredient costs and maintain stock for regular food preparation. Storing bulk supplies properly also helps protect flavour and texture from humidity, supporting day-to-day kitchen operations.

 Why Quality and Freshness Matter

Traditional Flavours: Familiar recipes and spice combinations help bring authentic regional flavours to everyday meals and gatherings.

Careful Storage: Sealed packaging and suitable storage conditions help keep savouries crisp and protect ingredients from excess moisture.

Flexible Quantities: Choosing quantities that suit your needs helps serve both domestic pantries and commercial kitchens.

Convenient UK Delivery: Reliable delivery options can make it easier to keep household and business kitchens stocked.

Choosing a trusted source for Indian snacks and culinary ingredients helps you prepare meals, cater events, and enjoy tea-time favourites with confidence.

Explore Chandra Foods for Indian savouries, nuts, and pantry essentials across the UK.
