For Windows 10 you can turn on a default color filter and enable Win+Ctrl+c as a keyboard shortcut to quickly toggle grayscale on and off (or other colorblindness filters)!
I found this shortcut accidentally before it had to be an enabled shortcut and it was very confusing 😅
