I've had my Acer Spin 3 with Linux Mint for about 2.5 years now, and it still works fine. I use it for pretty much everything. I also have a Samsung Chromebook 3 with Lubuntu installed via crouton. For my window manager, I use xfce on both laptops. I like the look of it, and it's pretty easy to run on most systems. In terms of software, I would say my favorites/most used are the xfce terminal emulator, Eclipse, vscode, and Firefox (although I would be lying if I didn't include Minecraft).
