I'm not aware of any PDF processing services, then again I've never looked :)

Personally, I would start with converting to text with a tool like pdftotext, then you have a much easier text processing challenge, to pick out the useful information and possibly reformat into something you can process with your stats/mathematics tools, most likely a spreadsheet/CSV file.
