This is pretty niche, but I think ZigGBA is cool. It's a very-WIP brand new SDK for making Gameboy Advance games with the Zig programming language.
In a similar vein, this GameBoy emulator written in Elm is highly impressive: elmboy.
I've never even owned a GameBoy product myself, I couldn't tell you why I'm so fascinated by these.
