As a windows user, I'm really interested in trying out linux, and I wanted to know which one is the best distro for coding, and a for a linux beginner. I've heard ubuntu is pretty good, but should I always use it?

Yes Ubuntu is best because is supported by Canonical company and software company which support Linux always support Ubuntu distribution. Second best linux distro is Fedora supported by RedHat company.
Also you can try Linux Mint which is using Ubuntu software packages and environment is very similar to windows.

It doesn't matter. Here depends on what desktop design you like. (Linux is very free in environment and you can choose design by your taste.)

Ubuntu is literally good choice for beginners as there are lots of documents, posts, and tutorials around internet. Also it can be applied on linux mint too, because it's based on ubuntu too. Linux mint has lots of built in GUI applications for making easier when setting and maintaining distro. KDE neon also can be a good candidate if you are finding distro based on ubuntu too :)
Try Pop OS! it's user friendly and imo better than ubuntu
Thanks! Do you happen to know of it's lightweight? Because I've heard ubuntu is pretty heavy with gnome. So, for a laptop with 8gb of ram, I'm not sure if it is going to be convenient, specially because I do use a lot of things simultaneously sometimes.
pop os also uses gnome as it's desktop environment so, i dont think there's that much difference but that's just my opinion a little research might prove me wrong.
I would say manjaro objectively is the best linux distro.

Manjaro is Arch based I think, so it might be a good idea to use it.
yes manjaro is indeed arch based and much more friendlier than arch itself, Ive used both and I recommend both. download some images and try them on virtualbox play around a bit see which one you'll like
