How difficult it is to crack interviews when switching tech stack/language?

Question is majorly for backend/full-stack development. As a beginner I am willing to start in JAVA as I am comfortable in it now but in future I may wish to switch to Python/Go as their demand is increasing very much in startups and product based companies.

I wanted to know from people who have changed their stack/language in their careers, how hard was it for you? Challenges faced in interviews? Salary hikes/negotiations? Time required for you to adjust? Did your experience act as a hindrance to you for cracking the new job?
