Definitely don't bother trying to read what the interviewer is "looking for". Be yourself. (That's all I'm ever wanting see as an interviewer myself anyway!) If they don't like who you are, it's better to find out now. Based on your stories, it sounds like most of those workplaces weren't worthy of you anyway.
Or, as one character in my mystery novel quips:
If they don't like you without a hat, they won't like you with a hat.
