As someone who has experienced burnout at work, I would suggest that you know your boundaries. We can get over-excited when doing one project and unconsciously say yes to everything until we realize it's too much. So you have to know your limit and set boundaries. Talk to your colleague or your boss about your boundaries if you can. A respectful coworker and employer will respect your boundaries.
Another thing is, plan out your to-do list with a Getting Things Done method by David Allen will help you avoid unneeded stress. And starting some regular workout won't hurt as well.
