Search Console's CWV Report is sourced from CrUX data so I'd similarly label it "Real-user" rather than "Lab" data.
CrUX has 8.4 million origins in it as of the most recent release (groups.google.com/a/chromium.org/g...) as opposed to 1 million. There are also more ways to access the data than BigQuery and Data Studio; it powers the field data section of PageSpeed Insights (PSI) and it's available in both the PSI and CrUX APIs. While it's true that BigQuery is updated monthly, these other tools are updated daily, so you can build some really interesting monitoring solutions on top of them. For example, I wrote a post a while ago about using one of these APIs in Google Sheets to track performance over time: dev.to/chromiumdev/a-step-by-step-...

Nice post! A couple of suggestions if I may :)
