I'd like to add a tip to the contingency plan part, namely that if there are no breaking changes in the new version, allowing only 10% traffic first and if everything is okay, then allow 20% more until you reach 100%.
Of course, if breaking changes are introduced then everything should be tested thoroughly. :)
