I am using Forestry.io at the moment and I like it, but have been looking at Strapi. I had not realized the other options here, so thank you again for the hard work!

I'm glad that this article is useful to you Bill. As of now, I've not planned a deployment / hosting strategy. Probably I will use Google Cloud, but it might take me a few months before diving to the topic and make a final decision.
Certainly, there are simpler options out there to host the product, but I want to learn more about cloud, so a first-tier provider is preferrable.
