For non-technical users, I'd lean toward Postman or potentially Apidog. Their visual interfaces are generally more approachable than some of the more code-focused tools.

I love that so many people are seeing and writing about this!
You've listed some of the reasons why the team behind voiden.md/ started that project.
If you have some old YAML (Swagger or Postman), you can always import it, and all you're left with is a good old Markdown.

Definitely check it out :)
