I would only display your site as a project if you can offer some additional information that is not already evident from using the site. Tech stack and design process might be two examples of this.
If your portfolio site's code is open source, you might not need to document it on the site.
On my portfolio site, I wanted to include it as a project because it is the only project of mine that was made with Gatsby and I wanted to show this off.
