The good news is many of them are unenforceable in court. However, I am not a lawyer and you should definitely speak to one before you give the finger to a NDA!
In the US, yes most NDAs are unenforceable; however, where I'm from (Philippines) employers includes NDA as part of the employment contract. So, in a nutshell, don't sign the whole deal, we'll look for another-- it is legit though since that my country's Labor Code loophole.
