ServSafe Food Handler practice test: what is on it, and what is not
The Food Handler card and the Manager certificate get confused constantly, and preparing for the wrong one wastes real money. The Food Handler course is short, non-proctored, and about 40 questions. The Manager exam is proctored, about 90 questions, and 70% of the scored items. Here is which one you probably need, and what the Food Handler material actually asks.

If your health department requires a certified food protection manager on staff, a Food Handler card does not satisfy it, no matter how many you have. Check which one your jurisdiction asks for before you pay for either.
What the Food Handler material actually tests
Handwashing: when to wash, how long, and what counts as a handwashing sink.
Temperature basics: the danger zone, 41 F and 135 F, and why TCS food is different.
Cross-contamination: raw above cooked, separate boards, glove and utensil use.
Allergens: the Big 9 and what cross-contact means in practice.
Personal hygiene and illness: reporting symptoms, covering cuts, clean uniforms.
Cleaning and sanitising: the difference, plus the wash-rinse-sanitise order.
The overlap you can reuse
Roughly three quarters of the Food Handler content is also Manager content, taught at a shallower level: hygiene, temperature control, cross-contamination, allergens and cleaning. The Manager exam adds cold-chain detail, cooling curves, HACCP, facilities, pest control and a management-systems domain.
So the efficient path is one-directional. Practise at Manager depth and the Food Handler quiz becomes trivial. The reverse is not true.
