You are talking about load balancing but only for HTTP services, did you also have some clues about scaling the videobridge component?
I am not a Jitsi expert, and maybe some of the Jitsi team can comment, however, one of the suggested ways you could achieve this is by putting splitting out the components and Jitsi have written about this here -> jitsi.org/news/new-tutorial-video-... so I would start there.
