I'm glad you found the projects fun. Your suggestions are good. I think unit tests would be a great addition. Initially I only had 10 projects, and in the end I decided to add the 11th project that uses an Express API with MongoDB as a precursor to what I would like to do in the future. So yea, will definitely be building more projects that use different data stores and give it that more "real-world" feeling.
