I've never used Stripe, I've used Paddle and Lemon Squeezy.
The reason is that they are Merchant of Record, which means they collect taxes and manage VAT and invoicing in the different countries.
Basically, they sell worldwide for you, and your customers, are their customers.
Then the MoR sends you a reverse charge invoice every month, and you need to pay your own taxes on that amount only.
Stripe doesn't remove that burden from you as far as I know.
Of course, the MoR service has a cost, but as a solopreneur I don't want to deal with international taxation on sales, and save a huge amount of time on that.
