Checking a Github profile is one way to see code samples from a prospective employee. It's also frequently used as a proxy for asking about candidate side projects. An active github profile shows that candidates code in their spare time. I did a talk on this very question recently, and how checking Github profiles is the same as asking about side projects (and why both of them are discriminatory against underepresented groups in tech)
