In the eLearning space we could really use a good, open content builder that is friendly to use for the non-technical.

There are a lot of solutions like iSpring, Articulate, etc. that have a friendly PowerPoint-like interface - but the end product they produce is horridly large and not as cross-platform as it could be.

There are other projects like eXe that are open and free - but the interface makes me weep at the mere thought of starting it up...

I'd always intended to take some of the mythical "spare time" and build some sort of Atom app that provided a GUI interface for an S5 or HTMLSlidy presentation for the content, and (???) for adding tests/quizzes and other intermediary knowledge checks. It's what to do about the testing part that I never really got around to considering... though I was definitely going to use the Pipwerks SCORM wrapper for interfacing with the LMS.

This would be a good, challenging, moderately complex app that could serve as a useful tool and showcase. It's not going to be a quick one, though the sort of thing you seem to be asking for rarely is. :)
