NEXT.js is definitely a great choice and I've seen many companies have success with the framework. It is important to remember that the site performance will only be as good as the APIs being called. I've seen too many implementations hindered by choosing a budget legacy backend like Shopify or Magento instead of an API-first offering.
Of course if a company does the work to go shopify headless it is much easier to have them switch to a better (sometimes cheaper) alternative, but it's always better to only build once.
So I guess my advice is, use NEXT.js, don't use shopify.
