Budget for education is nice indeed. I can't really imagine working for a company where they don't encourage learning in some way.
Everything else that's not related to work (insurance benefits, gym memberships) I prefer to keep separate from the job as to not mix private and professional life too much. I can imagine why the bonus could be attractive to some (especially health insurance in the US), but not to me personally.

I see your point and I probably don't use the gym discounts (as I was going to another that I've near home before the covid) but I'm getting a health insurance due to long waiting for each service on public one (I'm from Spain and the public health services are saturated tbh, specially for giving the free service to every person, no matter if they are on the EU or not, and no matter if they quote taxes or not) so It's a nice plus similar to paying you around 500-600€/year more (that's the average cost of private health insurances)
For such amounts yeah, it's great to have company health insurance. In the Netherlands it's <€150 monthly so very overseeable. And with that in mind I prefer not to get "locked in" and have full freedom of choice. I guess it all boils down to your local circumstances when it comes to these kinds of benefits.
Your gym example illustrates nicely why I, too, held on to my own subscription . One company I worked at had a gym around the corner to the office. But I'm not one for working out before or immediately after work, so the local gym in my home town was still a better fit.
Other than what was already mentioned, team building activities are also high up on my list. Working is mostly about the people, so connecting with coworkers is key imo.
