I've written a few libraries you might be interested in, they are written for Espressif arduino-esp32 and wrap NimBLE-Arduino.

Both libraries have been pretty well tested and run on iOS(26.3), macOS(Ventura), Android(16), Windows(11), and Linux(Ubuntu) and I attempted to build both libraries so they would be useful for both building actual devices OR emulating devices.
Both libraries are also setup for power saving, shutting off the bluetooth radio when idle and play well with esp32 light and deep sleep.
