I would add FaaS to that list but for the most part I agree, it does seem to be getting a little out of control. The main annoyance is that a number of things that are already services are marketing themselves as "As A Service", with prime examples being companies like Uber and Lyft being touted as "Transportation as a Service (TaaS). Are taxi companies going to start marketing as TaaS too? What about trains, planes and ferrys?
