You definitely can. We have Docker compose templates in our docs. To do so, you need to create 2 files and run 2 separate docker containers, which is less convenient for user's who just want to run it and play or for users, who just don't want to manage the Postgres themselves.
To be honest, it feels a bit weird to hack all of this for some users. From a product management perspective, it's sometimes in everybody's best interest to gently push back against weird requirements.
