Prometheus 0 Targets and Loki 0 Logs — 5 Real Fixes from ragleap-core Observability Release

We shipped observability for ragleap-core v0.2.0 (v0.2.1 is docs patch).

Stack: Prometheus + Grafana + Loki + Promtail.

Fixes that actually mattered:

1. ConfigMap corrupted by missing newline

Fix: Replace custom regex, use canonical *path* + cri stage
