+1 for being from Ireland, half my husbands family lives over there :) As for your resume I have a few thoughts.
It is pretty long. I would suggest shortening it up to 1 page. I would do this by eliminating the first summary and saving that for a cover letter or email that you would send with the resume. I would also avoid writing paragraphs. I think it is a lot easier for those reading your resume if you use bullet points. It will also force you to make every word count and ensure you are not using a lot of fillers.
I would move your job experience up to the very top and follow that with skills or education.
I would pare down your skills. It is AWESOME that you have so many, but when you are applying for a job make sure to only include the ones that are relevant for that job.
I would remove your references, no need to waste space with other people's contact info. Instead I would suggestion writing "References available upon request" at the bottom
If you have time I would suggest reading this Resume Writing Tips blog I wrote. Might have you ideas to tighten this up a bit.
