How do you protect yourself against data leaks?

Regarding the latest -and biggest until the date from a single source¹- data leak, what do you do to be as protected as possible?

Personally, I try to have the least data as possible online -I want to write a post about this, but I can't find the time -, several email addresses depending on how safe looking is the web page: gmail, 10minute mail, and hopefully protonmail/posteo/tutanota whenever I finally chose one. I also try to delete my phone number and other personal information when possible and delete accounts when I'm done using them.
