Study 1: 671 Effect Sizes. Ambient Scent Boosts Evaluation and Purchase Intent by 3 to 15 Percent.
Roschk and Hosseinpour (2020) published a meta-analysis in the Journal of Marketing synthesizing data from 671 independent effect sizes across decades of ambient scent research. They found that pleasant ambient scent consistently improved product evaluations, increased purchase intentions, and enhanced store perceptions by a measurable margin (DOI: 10.1177/0022242919881137).
The effect was not trivial. Across hundreds of studies, the average improvement ranged from 3 to 15 percent depending on the outcome variable. That is real money at retail scale.

Study 2: Chemosignals Accelerated Willingness to Pay in a Controlled Lab Setting
de Groot et al. (2023) published in Nature Scientific Reports and demonstrated that exposure to specific chemosensory signals accelerated participants' willingness to pay for products in an economic decision-making task (Nature: s41598-023-27643-y).
