i personally don't recommend open source version of odoo, if you have money just purchase the cloud one
their module actually connecting each other, so if some module are paid, then you can't optimize entire tool in free mode
they lock important features so you can't do anything about it, not like freemium software where we can still access all features even just half part of each module
i would recommend google sheets but you have to do some javascript to make custom data entry form inside the cells
