The analogy that you have made and imagined is very much true.
Well, In-fact the CORE employees of the well-known "AI" companies do switch companies, they do apply their knowledge, best practices and methodologies. More than that, like you have said on training on everyone’s data is a very common thing and who knows these AI companies may be distilling each other data from a really long time!
