We come across different architecture for android development. Can someone please explain what is actually seperation of concern and an example to show challenges faced because seperation of concern not applied in app.

TBH, there are a ton of resources on this particular topic.. so I doubt you'll find many people willing to post a super-detailed comment here in an attempt to cover this. so might I suggest you start with this post and see where it takes you?
I see you tagged "android" and "kotlin" specifically here, but even though the "code snippets" it contains are HTML, CSS, and JS, the post itself explains the concept in a pretty language-agnostic way..
