Explaining What Happens On-Chain vs Off-Chain

While reading the Midnight docs, I noticed it wasn’t very clear which parts of a transaction happen on-chain and which stay private.
I submitted a PR that adds a simple breakdown so new developers can easily understand where data lives and why.
