I've seen more and more sites choosing to have a separate mobile site rather than implementing responsive css into thier main site. What do you think of this approach?

Not into it. Reminds me of when I had to visit m.facebook.com on my LG Voyager.
Almost kind of imparts the idea that you're going to be getting a stripped down version of the site/app, even if that's not the case.
It's a hill I'm willing to die on. I'll avoid mobile.* subdomains the way so many others avoid non-blue bubbles in their iMessages.
I guess one could make the argument that if you want your site to TRULY be accessible to everyone, that it makes sense to have a REALLY lean version that has no trouble being loaded over 2nd/3rd world infrastructure, but that's not really how I read Derek's question.
And dude, the LG Voyager was the height of cool when the iPhone JUST came out (it was a bit too expensive right out of the gate for 14 year old me).
