For emojis I just copy and paste from emojipedia
Using triple caret(`) to embed code is something nifty I've used before. Also you can use Jekyll front matter

On Mac you can use Control+Command+Space to open the Character-Viewer which can be used to add every single Character/Emoji/Rune/Weird-letter there is.
