TL;DR
I have been watching anime for almost 5 years. The kind of story they have is very different and grounded, and fantasy at the same time. I absolutely love watching series/movies in anime. There are plenty of genres there, too.
Also, Anime is not cartoon; once you see it then you will realize.
Here are my favorite Anime🚀
- Monster: I absolutely love this anime. It is one of the best stories and narratives I have seen in anime. Especially the antagonist totally stole the show whenever it came on screen.
- Your Name: Makoto Shinkai’s best work till today, for many anime watchers like me. It blends fantasy and thriller quite well.
- Grave of the Fireflies: This movie is enough to make a grown man cry. One of the classic movies if you love movies based on World War 2.
- In This Corner of the World: This movie was in my watchlist for some time, but when I watched absolutely loved it. I like the slow nature and exploration of life through the young married lady. Love watching war films, so highly recommended.
- Only Yesterday: It rides heavly on nostalgia value, which I absolute loved it. It has everything that I like, the slice of life, Country side, and love.
- Erased: This is for time travel fan. It is very hard-hitting and also love the theme of nostalgia taking us back to school times.
- Death Note: If you have never watched any anime, Death Note is perfect to start for beginners. It was my first anime and absolutely blew my mind.

Hy, am currently watching Vinland Saga, and am definitely loving it. Also watching My Dress-up darling, am a sucker for romance so i definitely had to watch it.
I would say that my to 5 would be:
Attack on Titan(Still haven't gotten over the ending though.)
Bleach(Currently watching TBYW)
Castlevania
Vinland Saga
Lost in Starlight (Of course i had to add a romance in the mix)
I honestly don't know most of the titles you've mentioned, I've only watched Death Note and i liked it, but that just means there is still lot more i need to explore and watch, so thanks.
I mostly avoided the Action genre in Anime whenever I started, for some reason it doesn't hook me, that's why I watched other Thriller, Comedy, Fantasy, and Romcom genres that I liked.
Recently started watching Demon Slayer. On the first attempt, I was able to watch only 4 episodes. Now I am 20. So far, it is good. After the initial, every similar story is like other anime. It is gripping now.
Yeah Demon Slayer is cool, i still need to watch the third season.
Am recently finding myself veering towards more subtle amines, less with action more with stories. But i see your point of view.
If you want something else, like a thriller with a great story, I would recommend you Monster. It is chilling. It might feel slow, but when hooked, you can not go back.

Probably the monogatari series. I find the art style and atmosphere uniquely mesmerizing. I've read the first couple of books too.
Also Wolf's Rain, at least the first half (the second half had some things that annoyed me). Also because of the atmosphere (and OST).
Other worthy mentions: Kabaneri of the Iron Fortress, Made in Abyss, Attack on Titan, The Promised Neverland, Mahou Shoujo Madoka Magica.
You are watching some of the anime that I don't know. Looking forward to trying one from these.
I have watched a bunch of them (around 75+), my favorite would be AOT bcz of its storyline :)

Heard Solo Leveling has insane animation and fight scenes — definitely adding it to my list!
One Piece: Best anime ever, it has something that other anime does not!!
