Great list! I've personally used Insomnia and Hoppscotch — both are solid alternatives to Postman. Insomnia is great for testing with a clean UI, and Hoppscotch is super lightweight and fast, especially for quick requests in the browser.
ApiDog for me, less heavy then Postman and great for creating documentation
