Minecraft because what you could do is kind of endless and modding kits like Forge had a ton of support.
Do you do that using JSON? Or can you use other stuff as well?
You can use other stuff. People just deobfuscate the JAR files for Minecraft versions and put in a modding system so that it becomes easy to develop mods and it becomes extremely easy for users to install mods. One of these modding kits is Forge. When your talking about JSON, your talking about datapacks right? Those are pretty cool, but your still limited to the commands that can be performed in game.
Side note - some of the texture packs for Minecraft seem pretty mind blowing. I was looking at one called NAPP recently. Might have play around with those.
