I use the built-in feature of the proprietary accounting solution I pay for to generate the invoices. The tool is connected with my bank account, doing so all related accounting entries are generated automatically. A bit of administration time is sparred in that way.
On the other side, to track my work and provide to my clients the details of their bills, I use the open source offline app I developed (web, GitHub).

Manta looks nice. I used to have Zoho which is nicely integrated with their tooling and you get a good deal on the free tier.
But they recently moved some templating options to their paid tiers (and higher tiers, nonetheless).
Nowadays I'm mostly managing via Google docs.
